Food as Medicine

CHIA PUDDING WITH SEASONAL FRUIT, OATS, ALMOND MILK AND NUTS

YOU WILL NEED

  • 1/2 Cup of Chia seeds (any colour)
  • 1 Tin of Coconut Milk or 400mls of your favourite Nut Milk
  • 1 Cup of Fruit – in season fresh, frozen or dried
  • 1 Pinch of Salt
  • Cardamom, Cinnamon, Nutmeg to taste

This will last in the fridge for 3-4 days. Some nut milks may sour so you may want to prepare smaller amounts if using nut milk.

ADDITIONS

  • 1 Kiwi fruit
  • 1 Handful of Nuts
  • 1 Handful of Buckwheat Oats
  • 1 Teaspoon of Topping with equal amounts of
  • Flaxseed
  • Lecithin
  • Maca Powder

TO PREPARE

You can even do this 10-20 minutes before you eat or if it’s easier, you can prepare the night before and leave in the fridge. put the Chia Seeds in a bowl. If you like, slightly heat up whatever milk you like. I use coconut milk from the tin when I don’t have much time, otherwise homemade Nut Mylk.

Add 440 mL or 1 tin of warmed coconut milk to the seeds. The more seeds you add, the thicker it will be so just play around with it – you can’t go ‘wrong’.

I like to either add berries in season, or black currants, but you could add anything you like. The blueberries we had gave a lovely purple colour. I put in a generous couple of handfuls while it was still warm. Stir a bit every few minutes and voila! Your own yummy pudding.

For those with a sensitive gut, use Buckwheat Oats as they are much easier to digest. We’ve added Kiwi Fruit and almonds. We also added a topping we make with crushed flaxseed, maca powder, lecithin and hemp seeds.

WHY CHIA?

Because ‘Chia’ means ‘Strength’. Sounds something you could do with a little more of?

Nutritionally it is a source of complete protein, essential fatty acids – plus it’s packed with loads of nutritional benefits like calcium, magnesium, manganese and phosphorus and a good amount of fibre.

This is how I start the day and it gets me through really well.  There is so much goodness packed in this bowl, you can feel it.

Maca powder is great for kids too, actually, all these ingredients are amazing, as they are great for blood sugar regulation, energy, brain function, liver function and soothing to the gut.
